It has been a VERY long time. I'm going to try and be more consistent. Tonight I'm making a salad that is full of power foods. Foods that are good for you and will make you feel healthier and happier. As in past, I'm not one to measure. Everything is to your liking.
1 dozen small beets, skin off and cubed
1 batch of fresh kale
A little olive Oil
black pepper
feta cheese (too your liking - less is better)
green onions
Balsamic
Olive Oil
Heat oven to 415. Place beets on pan and coat with olive oil and black pepper. Depending on size you cut beets will depend on cooking time. Keep an eye on them. It's usually about 30 minutes. Remove from oven and let beets cool to room temperature. In your salad bowl tear up the washed and dried kale. In small blender, blend balsamic and olive oil. I use a little more balsamic than oil. Again, it's to your liking. Throw in a little black pepper. Once blended, pour dressing over kale and toss. In separate bowl add beets (cube the beets after cooking), black pepper, onions and feta cheese. Mix well and pour over kale. For some added fun -- put some leftover veggies in the salad. I used some grilled corn and it was fabulous. I also top it off with some Hemp for an added punch. Enjoy. This is one of those I just threw it together meals.
